Ingredients

2 Tbsp. butter
1 c. brown sugar
4 Tbsp. flour
1/2 tsp. salt
2 egg yolks, slightly beaten
1/2 tsp. vanilla
1 1/2 c. milk
1 (9-inch) baked pie shell
Preparation

Melt butter in heavy kettle over low heat.
Mix sugar, salt and flour; add to melted butter, stirring until mixture is heated. Add the milk and cook over medium heat.
When the mixture begins to thicken, add the beaten egg yolks.
Cook until smooth and thickened.
Cool slightly and add vanilla before pouring into a baked pie shell.
Add meringue, if desired.
I use filled soybean milk (8 ounce can).
