Ingredients

1 c. precooked Minute rice
1/2 tsp. salt
1 c. raisins
1 pkg. coconut cream pudding
4 c. milk
1/3 c. sugar
1 egg, well beaten
1/2 tsp. vanilla
1/2 c. coconut (optional)
1/4 tsp. cinnamon
1/8 tsp. nutmeg
Preparation

Combine ingredients, except vanilla and spices.
Cook and stir until mixture comes to a boil, 8 to 10 minutes.
Remove from heat; cool 5 minutes, stirring once or twice.
Add vanilla.
Pour into bowl; sprinkle with cinnamon and nutmeg.
