Harvest Minestrone - cooking recipe
Ingredients

4 slices bacon
2 stalks celery, chopped
1 large onion, chopped
2 cloves garlic, minced
1/4 c. minced parsley
1 1/2 tsp. basil
1 tsp. oregano
2 sliced carrots
2 cubed potatoes
2 cubed turnips
2 medium zucchini, cubed
1/4 head cabbage, shredded
2 (1 lb.) cans tomatoes, chopped
12 rounded tsp. instant beef bouillon, dissolved in 3 qt. water
1 pkg. frozen peas
1 c. elbow macaroni
1 (16 oz.) can Great Northern beans
2 tsp. salt
1/2 tsp. pepper
Preparation

Fry bacon; drain and chop.
In bacon fat, saute for 5 minutes the next 6 ingredients.
Add the following 5 ingredients and saute for 10 minutes, stirring occasionally.
Add tomatoes and beef bouillon mixture.
Bring to boil and reduce heat.
Cover and simmer 30 minutes, stirring occasionally.
Stir in remaining ingredients with reserved bacon.
Cover and simmer for 15 minutes.
Serve sprinkled with grated Parmesan cheese.
Makes 7 quarts.
