Spinach Bacon Salad - cooking recipe
Ingredients

10 oz. fresh spinach
1 avocado
2 Tbsp. lemon juice
2 Tbsp. minced red onion
8 strips bacon
4 Tbsp. olive oil
1 Tbsp. wine vinegar
1/2 tsp. dry mustard
3/4 tsp. salt
1/2 tsp. pepper
1 c. croutons
Preparation

Make dressing by combining olive oil; vinegar, mustard, salt and pepper.
Wash, drain and dry spinach.
Tear into bite size pieces and place in salad bowl.
Halve avocado, remove pit, skin and slice thin.
Place in small bowl and sprinkle with lemon juice to prevent discoloration.
Add minced onion and 2 teaspoons of dressing and toss lightly.
Pour dressing over spinach and toss lightly again.
Add avocado and toss.
Cook bacon in 1 teaspoon olive oil; when crisp and brown, pour over spinach mixture, fat and all.
Break up bacon pieces and add to mixture and toss.
Top with croutons and serve all at once.
