Chicken Cashew Casserole - cooking recipe

Ingredients
    1/4 c. diced onion
    2 Tbsp. oil
    2 cans cream of mushroom soup
    4 c. diced cooked chicken
    1 c. cashews
    1/2 c. diced celery
    2/3 c. chicken broth
    4 Tbsp. soy sauce
    2 c. cooked rice
    1 c. chow mein noodles
Preparation
    Saute onion and celery in butter in skillet.
    Add broth and soup, mix well.
    Simmer for 5 minutes.
    Add chicken and soy sauce. Simmer for 5 minutes longer.
    Stir in rice.
    Place in greased casserole.
    Bake at 375\u00b0 until bubbly.
    Sprinkle cashews and noodles over top.
    Bake until brown (about 12 minutes).
    Yields 8 servings.
