Delicious Zucchini Puffs - cooking recipe

Ingredients
    2 medium or 1/2 lb. zucchini*
    1 large egg
    2 Tbsp. whole wheat flour
    1/4 tsp. salt
    pepper to taste
    butter (for frying)
Preparation
    Coarsely grate zucchini.
    Should be 2 cups, slightly packed down.
    Beat egg until thickened and lemon color.
    Add zucchini, flour, salt and pepper.
    Stir well in large skillet the 2 tablespoons butter.
    Drop rounded tablespoonfuls of zucchini mixture well apart.
    When slightly browned, turn puffs and brown on other side.
    Add more butter as needed.
    Serve hot (yields 14).
