Shoepeg Corn Relish - cooking recipe
Ingredients

2 large cans LeSueur peas
2 cans Shoepeg white corn
1 big bell pepper, finely chopped
1 big onion, finely chopped
1 c. celery, finely chopped
2 cans French-cut green beans
1 (4 oz.) jar diced pimentos
1 tsp. black pepper
1 Tbsp. water
3/4 c. vinegar
1/3 c. oil
1 1/2 c. sugar
Preparation

Drain all cans of vegetables.
Combine rest of vegetables in large bowl.
Bring rest of ingredients to a boil or until sugar dissolves.
Cool and pour over vegetables.
Store in refrigerator for months.
Makes about 3/4 gallon.
