No Fat Lemon Blintz Pie - cooking recipe

Ingredients
    1 (24 oz.) carton no fat cottage cheese
    1/3 c. liquid egg substitute (must have 0 grams fat)
    2 egg whites
    3/4 c. sugar
    2 tsp. grated lemon peel
    1 tsp. lemon juice
    1/4 c. no fat sour cream
    3 Tbsp. flour
    1/8 tsp. salt
    1 tsp. vanilla
Preparation
    Preheat oven to 325\u00b0.
    In blender or food processor, place egg whites, liquid egg substitute, sugar and vanilla.
    Blend 1 to 2 minutes.
    Add salt, lemon juice, lemon peel, sour cream and flour. Blend thoroughly for a few seconds.
    Gradually add and blend in cottage cheese.
    Spray a 9-inch pie plate with nonstick cooking spray.
    Pour in mixture.
    (Be sure it is a big pie plate, the stuff expands.)
    Bake for 1 hour or until a toothpick inserted in the center of the pie comes out clean.
    The center of the pie will fall as it cools.
    This is normal.
    Use sugar substitute if diabetic.
