Eggplant Parmesan - cooking recipe

Ingredients
    2 lb. eggplant, peeled and sliced 1/4-inch thick
    3 c. spaghetti sauce (Ragu with no preservatives)
    8 oz. part skim Mozzarella cheese, grated
    3 oz. grated Parmesan (1/2 c.)
Preparation
    Place eggplant slices on baking sheet.
    Broil 5 to 7 minutes on each side until brown.
    Heat oven to 400\u00b0.
    On the bottom of an 8 x 12-inch baking dish, spread some sauce to cover bottom of dish. Place a layer of eggplant on top.
    Sprinkle with 1/3 of each cheese and repeat layers.
    Top with remaining cheeses and sauce.
    Cover dish with foil and bake for 20 minutes.
    Uncover and bake 10 minutes longer.
