Peanut Soup - cooking recipe

Ingredients
    3 c. chicken or beef stock
    1 dried red chili
    1 medium onion, coarsely chopped
    2 medium carrots (1/2-inch slices)
    1 large leek (white with 2-inches of green), coarsely chopped
    1/4 c. uncooked white rice
    1/2 tsp. salt
    1/2 c. smooth peanut butter
Preparation
    Combine stock, onion, leek and carrots in a heavy pot.
    Bring to a boil; partially cover and simmer 30 minutes.
    Blend until smooth.
    Bring to a boil, then stir in rice, salt and chili. Reduce heat to low; cover tightly and cook 20 minutes.
    Mix peanut butter in 1/2 cup soup until smooth.
    Add to the rest of the soup. Cover, then simmer 5 minutes.
    Discard chili.
    Serves 4 to 6.
