Ingredients

2 eggs
1/2 c. brown sugar
1/2 tsp. cinnamon
1/3 c. raisins
1 c. skim milk
1 tsp. vanilla extract
1/2 c. rice, cooked
Preparation

Beat together eggs, milk, brown sugar, vanilla and cinnamon. Spread rice into a buttered 8-inch square pan.
Sprinkle raisins over rice.
Pour egg mixture evenly over top.
Bake in preheated 350\u00b0 oven for 25 to 30 minutes.
Serve hot, warm or cold.
Top with yogurt or sour cream if desired.
Makes 6 servings.
