Fresh Apple Cake - cooking recipe

Ingredients
    1-1/4 c. cooking oil
    2 c. sugar
    2 eggs, slightly beaten
    3 c. flour
    1 tsp. cinnamon
    1 tsp. soda
    1/2 tsp. salt
    3 c. apples, grated
    1 c. nuts, chopped
    1 tsp. vanilla
Preparation
    Blend first 3 ingredients, sift together the dry ingredients, set aside.
    Add to first ingredients the apples, nuts and vanilla. Blend this mixture with the dry ingredients.
    Mix well, pour into greased loaf pan and bake at 375\u00b0 for 45-60 min. or until toothpick comes out clean.
    This is also good in a 9 by 13 in. flat cake pan. Frost with caramel frosting.
