Tortilla Soup - cooking recipe
Ingredients

5 chicken breasts
1/2 pkg. taco seasoning
1 can Ro-Tel tomatoes
1 can corn
1 bunch green onions, sauteed
1/2 c. rice
salt and pepper to taste
Preparation

Add taco seasoning to water when you cook the chicken. Dice chicken and save 3 breasts for taco salad. Cool and refrigerate broth. Remove fat from top. To broth, add tomatoes, corn and green onions. When soup comes to a boil, add rice, salt and pepper to taste. Simmer, covered, for 20 minutes.
