Mexican Meat Loaf(Weight Watchers Recipe) - cooking recipe

Ingredients
    1 Tbsp. plus 1 tsp. vegetable oil
    1 c. chopped onions
    1 c. chopped red or green bell peppers
    2 garlic cloves, minced
    1 pkg. instant beef broth and seasoning mix
    15 oz. ground veal or ground turkey
    4 oz. Cheddar cheese, shredded
    3/4 c. plain dried bread crumbs
    1/2 c. tomato sauce
    1/4 c. plain yogurt
    2 Tbsp. chopped fresh parsley
    2 tsp. Worcestershire sauce
    1 tsp. chili powder
    dash of pepper
Preparation
    Preheat oven to 375\u00b0.
    In a 9-inch skillet, heat oil over medium heat; add onions, peppers, garlic and broth mix.
    Saute until onions are translucent.
    In medium bowl, combine sauteed vegetables with remaining ingredients.
    Shape mixture into a loaf and place in an 8 x 8-inch pan.
    Bake until browned, about 45 minutes.
