Lime Chicken With Melon - cooking recipe

Ingredients
    6 whole chicken breasts, split, skinned and boned
    1 clove garlic
    7 Tbsp. butter, divided
    1/4 c. lime juice
    2 minced scallions
    1 tsp. tarragon
    1 tsp. salt
    1/8 tsp. freshly ground pepper
    1/2 c. white wine or Vermouth
    1 honey dew or cantaloupe, cut in 12 pieces
    lime wedges (garnish)
    mint leaves (garnish)
Preparation
    Rub cut garlic on chicken and place in 2 well-buttered 13 1/2 x 8 1/2 x 1 3/4-inch baking dishes.
    Sprinkle lime juice, scallions, tarragon, salt and pepper over chicken.
    Dot with 7 tablespoons butter.
    Add wine.
    Bake, uncovered, at 375\u00b0, basting every 10 minutes.
