Eggplant Country Style Supper - cooking recipe
Ingredients

1 medium-size eggplant, peeled and cubed
3 Tbsp. bacon drippings or butter
1/2 c. diced onions
1 (No. 2 1/2 can) tomatoes, chopped
1 Tbsp. finely cut parsley
1 tsp. sugar
1/2 tsp. chili powder
1 tsp. salt
1/8 tsp. pepper
1 c. buttered bread crumbs
1/2 c. grated cheese
Preparation

Preheat oven to 350\u00b0.
Grease a 2-quart casserole dish.
Saute eggplant 5 minutes in drippings in large frying pan.
Pour mixture into prepared baking dish.
Saute onion 2 minutes in same pan. Stir in tomatoes.
Add parsley, sugar, chili powder, pepper and salt.
Stir and let come to boil.
Pour over eggplant.
Sprinkle generously with crumbs and cheese.
Bake 45 minutes or until top is brown and bubbly.
Serves 6.
