Melt In Your Mouth Pumpkin Bread - cooking recipe

Ingredients
    1 c. oil
    5 eggs
    2 c. pumpkin
    2 c. flour
    2 c. sugar
    2 (3 oz.) pkg. coconut cream pudding (not instant)
    1 tsp. salt
    1 tsp. baking soda
    1 tsp. cinnamon
Preparation
    Mix oil, eggs and pumpkin.
    Combine remaining ingredients and add pumpkin mixture.
    Makes 2 (9 x 5 x 3-inch) loaves or 3 smaller ones.
    Can also make muffins.
    Grease pans well and bake at 325\u00b0 about 1 hour and 20 minutes.

    Can freeze.
