Jambalaya - cooking recipe

Ingredients
    1 1/2 lb. Cajun sausage
    1 lb. cooked chicken or shrimp
    3 Tbsp. oil
    1 medium onion, chopped
    3 Tbsp. flour
    1 clove garlic, chopped
    1/3 c. green pepper, chopped
    2 c. raw rice
    2 c. stewed tomatoes
    1 c. water
    1/3 c. onion tops
    1 1/2 tsp. salt
    2 tsp. parsley
Preparation
    Brown sausage in Dutch oven.
    (Cube chicken and set aside.) Fry onion in oil; add flour and cook until brown.
    Add water and all other ingredients.
    Bring to a boil, then lower heat and cover. Raise lid occasionally to stir, but not too often.
    Cook until rice is tender, 45 minutes.
