Ratatouille(Vegetable Stew) - cooking recipe

Ingredients
    3 Tbsp. olive oil
    1 small onion, chopped
    1 green pepper, chopped
    1 clove garlic, minced
    1 medium eggplant, cut up
    2 zucchini (1-inch slices)
    1 can tomatoes, chopped
    1 tsp. basil leaves
    1/2 tsp. salt
Preparation
    In a large frying pan over medium heat, combine oil, onion, pepper and garlic.
    Cook, stirring until limp.
    Add remaining ingredients and bring to a boil.
    Reduce heat, cover and simmer for about 35 minutes or until eggplant is very soft; stir occasionally.
    Uncover and boil rapidly about 20 minutes, stirring often, until most liquid evaporates.
    Salt and pepper to taste. Serve hot.
    Makes 4 to 6 servings.
