Super Stuffed Potatoes - cooking recipe

Ingredients
    4 large baking potatoes
    16 oz. low-fat cottage cheese
    1 c. diced ham
    1 c. shredded Cheddar cheese
    1/2 c. chopped green onions
    1/2 tsp. salt
    1/8 tsp. freshly ground pepper
Preparation
    Prick potatoes all over with fork. Arrange in microwavable dish; microwave on High for 15 to 18 minutes, turning halfway through until tender. Preheat oven to 400\u00b0. Halve potatoes and scoop out insides, leaving 1/4 inch shell.
    Mash cooked potato with cottage cheese in bowl. Stir in ham, Cheddar cheese, onions, salt and pepper. Spoon into shells. Bake 20 minutes at 400\u00b0.
