Cashew Chicken Salad - cooking recipe
Ingredients

4 c. cooked, diced chicken
1 c. chopped celery
2 small cans Mandarin oranges, drained
3 1/2 Tbsp. mayonnaise or salad dressing
1/2 tsp. salt
1 tsp. lemon pepper or ground black pepper
1 tsp. lemon juice
1 c. cashews or chopped pecans
lettuce leaves (optional)
Preparation

In a bowl, combine all ingredients except nuts and lettuce. Mix thoroughly. Add cashews and toss lightly.
Refrigerate until ready to serve. Serve on lettuce leaves, if desired.
