Zucchini Pie(Mock Apple) - cooking recipe

Ingredients
    pastry for double crust 10-inch pie
    8 small zucchini or 2 very large
    2/3 c. fresh lemon juice
    1 1/2 c. sugar
    1 tsp. cinnamon
    1/4 tsp. nutmeg
    1/2 c. flour
Preparation
    Peel zucchini; cut lengthwise in half.
    Remove seeds.
    Cut into large chunks as you would cut apples.
    There should be 8 cups.
    Put in large saucepan; add lemon juice.
    Cook over low heat until crisp-tender but not soft.
    Stir in sugar, cinnamon and nutmeg; simmer only until sugar dissolves.
    Cool; stir in flour. Bake at 400\u00b0 for 45 minutes or until crust is golden.
    Cool on wire rack.
    Serve warm.
