Ingredients

1 small eggplant, sliced in strips 1/2-inch thick
flour, salt and pepper
onion salt or powder
Preparation

Peel the eggplant.
Dip in the seasoned flour and fry in hot oil for 1 minute or until golden brown. Drain on paper towels and serve. These may also be fried in butter and sprinkled with oregano and Parmesan cheese.
