Zucchini Casserole - cooking recipe
Ingredients

1 lb. smoked sausage
1 medium bell pepper
1 1/2 c. water
4 or 5 zucchini, sliced (use young tender ones)
2 (15 oz.) cans jalapeno navy beans
1 chopped onion
2 Tbsp. cooking oil
2 or 3 tomatoes, chopped
Preparation

Fry sausage until slightly brown; add onions and cook until slightly browned.
Add water and cook 20 minutes.
Add tomatoes, zucchini and canned beans.
Simmer until zucchini are tender.
If too thick, add more water.
Serve on hot rice.
