Make Ahead Dinner Salad(8 Servings) - cooking recipe

Ingredients
    1 (11 oz.) mandarin orange segments
    1 1/2 c. mayonnaise
    1 1/2 Tbsp. prepared mustard
    1 1/2 tsp. lemon juice
    1/4 tsp. ground coriander
    4 oz. fresh spinach, washed and drained (about 4 c.)
    8 hard-cooked eggs, sliced
    1 medium cucumber, peeled, halved lengthwise and sliced
    1/2 c. chopped red onion
    1 c. sliced water chestnuts, drained
    1 1/2 c. chopped, cooked chicken or 2 (5 oz. each) cans boned chicken, drained
    1 (10 oz.) pkg. frozen peas
Preparation
    Drain oranges, reserving 2 tablespoons of syrup.
    Set aside. Blend together mayonnaise, mustard, lemon
    juice, coriander and reserved syrup.
    Set aside.
