Chiffon Pie - cooking recipe

Ingredients
    1 pkg. lime flavor gelatin
    1/2 c. cold water
    1 (11 oz.) can mandarins, drained, reserve syrup
    1 Tbsp. grated mandarin peel
    1 baked 8-inch pie shell, cooled
    1 c. boiling water
    2 Tbsp. mandarin juice
    4 c. prepared whipped topping
    sprig of fresh mint
Preparation
    Dissolve gelatin in boiling water.
    Add cold water, mandarin syrup and mandarin peel.
    Chill until thickened but not completely set.
    Line bottom of pie shell with well drained mandarin sections, reserving 3 sections for top of pie.
    Blend Jell-O mixture and 3 cups of whipped topping and spoon into pie shell. Chill until firm, about 3 hours.
    Garnish with remaining whipped topping, fresh mint and mandarin sections.
    Serves 8.
