Tofu Stroganoff - cooking recipe

Ingredients
    1 (10 1/2 oz.) pkg. firm tofu vegetable cooking spray
    2 tsp. olive oil
    2 c. sliced fresh mushrooms
    1/2 c. shredded carrot
    2 cloves garlic, crushed
    2 Tbsp. all-purpose flour
    1 tsp. chicken flavored bouillon granules
    1/4 tsp. pepper
    3/4 c. skim milk
    3/4 c. plain nonfat yogurt
    3 c. hot cooked spinach
    egg noodles, cooked without salt or fat
    2 Tbsp. minced fresh parsley
Preparation
    Wrap tofu in several layers of cheesecloth or paper towels. Press lightly to remove excess moisture.
    Remove cheesecloth.
    Cut tofu into 1/2-inch cubes.
    Set aside.
    Coat a large nonstick skillet with cooking spray.
    Add oil.
    Place over medium-high heat until hot.
    Add tofu.
    Saute 4 minutes.
    Remove from skillet and set aside.
