Morning Glory Muffins - cooking recipe

Ingredients
    2 c. flour
    1 1/4 c. white sugar
    2 tsp. baking soda
    2 tsp. cinnamon
    1/2 tsp. salt
    2 c. grated carrots
    1/2 c. raisins
    1/2 c. walnuts
    1/2 c. coconut
    8 oz. crushed pineapple, drained or 1 apple, peeled and grated
    3 eggs
    1 c. vegetable oil
    2 tsp. vanilla
Preparation
    In a large bowl, mix the flour, white sugar, baking soda, cinnamon and salt. Stir in grated carrots, raisins, walnuts, coconut and pineapple or apple.
    In a small bowl, heat the eggs, vegetable oil and vanilla.
    Stir into flour mixture until batter is just combined.
    Spoon into muffin tin, filling to the top. Bake at 350\u00b0 for 20 minutes.
