Squash Casserole - cooking recipe

Ingredients
    4 eggs, beaten or egg substitute (to equal 4 eggs)
    1/2 c. oil *
    1 c. dry biscuit mix (may use low-fat)
    1 (4 oz.) can chopped green chilies (with juice)
    1/2 c. chopped onion
    1 clove garlic, minced
    2 c. grated Cheddar cheese (divided use)
    4 c. coarsely chopped summer, zucchini or yellow squash **
Preparation
    *I've cut the oil down to 1/4 cup.
