Easy Chicken Gumbo - cooking recipe

Ingredients
    3 Tbsp. margarine
    1 can (16 oz.) cut okra, drained
    1 small onion, chopped
    1/2 small green pepper, chopped
    3 c. chicken broth
    1 can (32 oz.) tomatoes
    1 small bay leaf
    1 tsp. salt
    dash of pepper
    3 c. cooked chicken
    1 Tbsp. parsley
    Tony Chachere's Creole seasoning (optional)
Preparation
    Heat margarine in 3-quart saucepan until melted.
    Add okra, onion and green pepper; cook and stir until onion is tender.
    Stir in broth, tomatoes (with liquid), bay leaf, salt and pepper.
    (We like it spicy, so I add about 1 tablespoon Tony Chachere's Creole seasoning.

    Heat to boiling; reduce heat.
    Simmer uncovered 15 minutes.
    Stir in chicken and parsley; heat through.
    Serve chicken mixture over hot rice.
    Makes 6 servings.
