Potato Pancakes - cooking recipe

Ingredients
    4 medium potatoes
    1 small onion
    2 medium eggs, slightly beaten
    1 Tbsp. flour
    1 tsp. salt
    1/2 c. vegetable oil
Preparation
    Peel potatoes and onion; grate both into mixing bowl.
    Add slightly beaten eggs, flour and salt; mix well.
    Heat oil in heavy skillet.
    Drop potato mixture into hot oil by 1/3 cupfuls, forming ragged cakes.
    Cook over medium heat until crisp and brown (resist the urge to turn pancakes too quickly).
    Serve with hot maple syrup and butter or applesauce.
    Terrific for breakfast/brunch or as a side dish at dinner.
