Roasted Peppers - cooking recipe

Ingredients
    6 large red peppers
    1/4 to 1/2 c. olive oil
    fresh basil leaves or 1/2 Tbsp. dried
    salt and hot pepper to taste
    1 garlic clove (optional), sliced (also very tasty without garlic)
Preparation
    Wash, core and split peppers in half.
    Place on broiler pan lined with foil.
    Broil until skin is charred black.
    Remove and cover with foil and let stand for about 1/2 hour.
    Peel blackened skin and try to reserve any liquid from peppers in a bowl.
    Cut peppers into 1/2-inch strips.
    Place in bowl with liquid and add the rest of ingredients.
    Stir and allow to stand for about 1 hour before serving.
    Good as appetizer with Mozzarella or added to a sandwich.
