Skinny Blueberry Cobbler - cooking recipe

Ingredients
    3 c. fresh or frozen blueberries
    2 Tbsp. quick cooking tapioca
    1/2 tsp. vanilla
    1/2 c. skim milk
    3 Tbsp. sugar and sugar substitute to equal 1/4 c.
    3/4 c. water
    1 1/4 c. biscuit mix
Preparation
    Combine the blueberries, sugar, sweetener, tapioca and water in the bottom of a shallow 2-quart casserole.
    Sprinkle with the vanilla.
    Fork-blend the biscuit mix with the skim milk until evenly moistened and spoon on top of the berries. Bake in a 350\u00b0 oven for 30 to 40 minutes until the biscuit crust is well browned. Yields 8 servings.
