Shrimp And Pepper Kabobs - cooking recipe

Ingredients
    1 lb. unpeeled large fresh shrimp
    1 c. lemon juice
    3/4 c. vegetable oil
    1/2 c. soy sauce
    1/4 c. plus 2 Tbsp. chopped fresh parsley
    1/3 c. finely chopped onion
    1 tsp. salt
    1 tsp. pepper
    2 cloves garlic, minced
    2 medium size green peppers, seeded and cut into pieces
    2 medium size sweet red peppers, seeded and cut into pieces
    hot cooked rice
Preparation
    Peel shrimp, leaving tails intact.
    Arrange in a large shallow dish. Combine lemon juice, oil, soy sauce, parsley, onion, salt, pepper and garlic in a medium bowl. Stir well.
    Pour half of the mixture over the shrimp.
    Cover and marinate in refrigerator 4 hours. Drain shrimp, discarding marinade.
    Thread shrimp onto 4 (12-inch) skewers alternately with pepper pieces. Grill over medium coals 3 minutes on each side or until shrimp turns pink, basting with remaining marinade. Serve over hot cooked rice.
