Tomatoes Lutece - cooking recipe

Ingredients
    8 ripe tomatoes, peeled
    1/2 c. parsley, chopped
    1 garlic clove, crushed
    1 tsp. salt
    1 tsp. sugar
    1/4 tsp. pepper, freshly ground
    1/4 c. salad oil
    2 Tbsp. wine vinegar (red or white)
    2 tsp. prepared mustard
Preparation
    Immerse tomatoes in boiling water for 1 minute.
    Remove and peel with a knife.
    Combine remaining ingredients to make dressing.
    Slice peeled tomatoes into 1/4-inch thick slices. Restack tomatoes with dressing poured between slices and over top. Where stem is removed, place a sprig of parsley, marinating to enhance flavor.
