Summer Spaghetti Sauce - cooking recipe
Ingredients

1 zucchini
1/2 onion
3 tomatoes
1/4 c. catsup
1/2 tsp. oregano or Italian seasoning
1/4 tsp. garlic powder
salt and pepper
1 (12 oz.) jar plum jam
2 Tbsp. vinegar
1 Tbsp. brown sugar
1 Tbsp. finely chopped onion
1 tsp. seeded and finely chopped dried red chili pepper or 1 tsp. crushed red pepper
1 clove garlic, minced
1/2 tsp. ground ginger
Preparation

In a small saucepan, combine plum jam, vinegar, brown sugar, onion, red chili pepper, garlic and ginger.
Bring mixture to boiling, stirring constantly.
Remove from heat and cool slightly. Refrigerate, covered, overnight.
Makes 1 1/4 cups.
