Spanish Rice - cooking recipe

Ingredients
    2 c. rice
    1/2 onion
    1 fresh garlic
    4 chicken bouillon cubes
    2 medium tomatoes
    1/4 c. vegetable oil
Preparation
    Brown rice in vegetable oil in medium heat.
    Blend onion, garlic, tomato, 1/2 cup water and chicken bouillon cubes in blender until pureed.
    Pour mixture into browned rice and cover with lid to simmer for about 5 minutes, then add 2 cups of cold water and let boil until cooked with lid on.
    Allow to cool after cooked with lid off.
    Rice should be puffy.
    (Do not stir frequently; can turn too mushy.)
