Glazed Sweet Potato Wedges - cooking recipe

Ingredients
    1 Tbsp. plus 1 tsp. margarine
    1 Tbsp. plus 1 tsp. unsweetened orange juice
    1/4 tsp. ground cinnamon
    2 medium sweet potatoes, peeled
    orange slices (optional)
    fresh parsley sprigs (optional)
Preparation
    Cut each potato lengthwise into 8 wedges.
    Place margarine in an 8 inch square baking dish; microwave on high for 30 seconds, or until melted.
    Stir in orange juice and cinnamon; add potatoes, tossing to coat.
    Cover with wax paper; microwave on high for 6 to 8 minutes or until tender, stirring and turning dish once during cooking time.
    Garnish with orange slices and parsley, if desired. Yield: 4 servings.
