Ingredients

4 to 5 medium beets
1/4 c. frozen orange juice
1 Tbsp. cornstarch
2 Tbsp. butter
grated lemon rind
1/4 c. brown sugar
2 Tbsp. lemon juice
1/3 c. chopped pecans (optional)
pepper to taste
minced parsley
Preparation

Wash and trim beets.
Put in saucepan with 1-inch boiling water.
Add salt to taste.
Bring to a boil.
Cover and simmer for about 25 to 45 minutes or until beets are tender.
Drain, reserving 1/2 cup beet juice.
Peel and slice beets and set aside.
