Pirogi(Polish Potato Cheese Dumplings) - cooking recipe

Ingredients
    4 or 5 large potatoes, peeled
    1 lb. Cheddar, Swiss or Mozzarella, cut up
    1/4 c. chopped green onion
    white pepper to taste
    4 c. flour
    2 eggs, beaten
    2 pt. sour cream, divided
    1 tsp. salt
    3 to 4 quarts water
    6 Tbsp. melted butter
Preparation
    Boil potatoes, drain, add cheese and mash.
    Mix in onions and pepper.
    Set aside.
