Cajun Fried Chicken - cooking recipe

3 (3 lb.) whole chickens
3 Tbsp. Cajun seasoning
1 1/2 gal. peanut oil
Preparation

Remove giblets and necks, and rinse chickens with cold water. Drain cavities well; pat dry. Rub inside and outside of chickens with seasoning; set aside. Pour oil into a deep propane turkey fryer; heat to 350\u00b0 according to manufacturer's instructions over medium-low flame. Place 1 chicken on fryer rod; carefully lower into hot oil. Fry 12 minutes or until a meat thermometer inserted in chicken breast registers 170\u00b0. (Keep oil temperature at 350\u00b0.) Remove from oil and drain. Repeat procedure for 2 remaining chickens. Cool slightly before serving.
