Congealed "Green Goddess" Salad - cooking recipe

Ingredients
    1 (6 oz.) pkg. lime gelatin
    1 c. boiling water
    20 oz. can crushed pineapple, drained, reserving juice
    12 oz. cottage cheese
    3 oz. pkg. cream cheese, softened
    2 oz. jar pimentos, chopped
    4 oz. Hidden Valley Green Goddess dressing
    8 oz. burpless cucumber, unpeeled and diced (these are very long cucumbers usually hothouse and individually wrapped in the produce department)
Preparation
    Dissolve gelatin in 1 cup boiling water.
    Cool. Add 1 cup pineapple juice.
    Add water, if necessary, to make 1 cup.
    Mix well with cottage cheese, cream cheese, pineapple, dressing, pimentos and cucumber.
    Pour into shallow dish with cover and refrigerate.
    Cut into squares to serve.
