Zucchini Oatmeal Muffins - cooking recipe
Ingredients

3 1/4 c. flour
3/4 c. honey, or 1 c. sugar
1 c. pecans, chopped
1/2 c. quick oats
1 Tbsp. baking powder
1 tsp. salt
1 tsp. cinnamon
4 eggs
1 medium zucchini (10 oz.), finely shredded
3/4 c. oil
3/4 c. milk
Preparation

Preheat oven to 400\u00b0.
Mix first ingredients; add beaten eggs, then stir in zucchini, oil, milk and nuts.
Mix until moistened. May have to add more flour.
Bake 20 minutes.
Makes 2 to 3 dozen.
