Lemon Filling - cooking recipe
Ingredients

1 c. sugar
3 Tbsp. cornstarch
1 c. boiling water
2 eggs
2 large lemons, juiced
1 grated lemon rind
2 Tbsp. butter
Preparation

Mix dry ingredients. Beat eggs with rotary beater, then stir into boiling water.
Add lemon juice and grated lemon rind. Combine well and cook in top of double boiler until thick and smooth. This filling may be used on top of cake or between layers.
