Surprise Carrot Cake - cooking recipe

Ingredients
    2 1/4 c. cake flour
    1 1/2 c. sugar
    3/4 c. mayonnaise
    2 tsp. baking soda
    2 tsp. ground cinnamon
    1/2 tsp. salt
    1/2 tsp. ground allspice
    1/2 tsp. ginger
    3 eggs
    1 (8 oz.) can crushed pineapple (juice also)
    2 c. finely shredded carrots
    3/4 c. chopped pecans
    Cream Cheese Frosting
Preparation
    Grease and flour two round pans, 9 x 1 1/2-inches.
    Beat all ingredients except carrots and frosting in bowl on low speed, 30 seconds, scraping bowl constantly.
    Beat on medium speed 3 minutes, scraping bowl occasionally.
    Stir in carrots and pecans. Pour into pans.
    Bake 30 to 35 minutes until done.
    Cool 10 minutes.
    Remove from pan.
    Cool completely.
