Mango Muffins - cooking recipe

Ingredients
    2 c. flour
    2 tsp. baking soda
    1 tsp. cinnamon
    1 1/2 c. sugar (or less, depends how ripe/sweet mangos are)
    3/4 c. salad oil
    3 beaten eggs (can use Egg Beaters)
    2 tsp. vanilla
    1/2 c. shredded coconut (optional)
    1/2 c. chopped nuts (optional)
    2 c. chopped mangos
Preparation
    Preheat oven to 350\u00b0.
    Grease 24 cupcake tins.
    Sift dry ingredients together.
    Add mangos, oil, eggs and vanilla and mix well.
    Add nuts/coconut if used.
    Pour into muffin tins and bake 25 to 30 minutes.
    Can also bake in small foil bread pans to use as gifts.
