Wild Duck Bohemian - cooking recipe

Ingredients
    peels from 6 oranges
    2 wild ducks, dressed
    1 c. wild rice
    2 tsp. salt
    2 Tbsp. minced onion
    1/4 lb. butter, melted
    2 Tbsp. green pepper, minced
    2 Tbsp. minced celery
    1 (4 oz.) can mushrooms
    1/4 tsp. pepper
Preparation
    Cut orange peels into strips, about 1/4-inch wide.
    Poke holes into the ducks and force the peels into the holes.
    Completely cover the ducks with remaining orange peels.
    Cook the wild rice in 1-quart of water with 1 teaspoon salt for 40 minutes.
    Drain off unabsorbed water and dry the rice on a paper towel.
    Add onion, pepper, celery, mushrooms (sliced), pepper and melted butter to the rice and mix well.
    Stuff the ducks with this dressing and roast for 2 hours at 350\u00b0.
