Chicken Soup Irish-Style - cooking recipe

Ingredients
    5 c. water
    1 1/2 tsp. salt
    2 lb. chicken parts (wings, necks and backs)
    2 stalks celery, diced
    1 leek, diced
    1 large carrot, diced
    2 medium potatoes, diced
    1/2 c. peas
    2 egg yolks
    3/4 c. plain yogurt
    1/2 head lettuce, coarsely shredded
Preparation
    Bring water, salt and chicken parts to a boil in a large saucepan; cover and simmer 1 hour.
    Add celery, leek, carrot and potatoes; simmer for 20 minutes.
    Remove chicken from broth and add peas.
    Simmer 8 minutes.
    Remove scum from soup.
    Lightly beat egg yolks; stir in yogurt.
    Remove soup from heat and stir in yogurt mixture.
    Adjust seasonings.
    Garnish with lettuce.
    Serve at once.
