Ingredients

1 can chickpeas
1 onion, minced
1 large can tomatoes or 1 can tomato paste, diluted with 1 can water
1 large eggplant, cubed (do not peel)
4 Tbsp. oil
salt and allspice to taste
Preparation

Fry onion until lightly golden.
Add eggplant and chickpeas, stirring lightly, until eggplant is tender.
Add tomatoes or diluted tomato paste and seasoning, blending for a few minutes until done.
Serve warm or cold.
