Country Limas - cooking recipe

Ingredients
    1 lb. baby lima beans
    2 medium potatoes, chunked
    1 ham hock, chunked
    1 tsp. thyme
    2 tsp. ground oregano
    2 Tbsp. salt
    2 Tbsp. fine ground black pepper
Preparation
    Soak beans overnight or cover with water 2-inches above beans and bring to boiling.
    Boil them for 3 to 4 minutes, then let them sit for an hour.
    Drain the water and refill to 2 to 3-inches above beans.
    Add all other ingredients, except potatoes.
    Bring to boil, then simmer for 30 minutes.
    Add potatoes and cook until potatoes are done.
